From now on, there will be another logo, decorating our trucks. For those of you, who did not know yet: ÄhrenGlück (which might be hard to pronounce when you do not speak German 😜) is our regional concept, that mainly combines the use of regional raw materials and a sustainable production process. However, there is so much more hidden behind the concept.

And that is the reason why we will shorty sum up all the facts about the concept and renew our current story highlight “sustainability” to give you all the information about it! 🙂

Das Weichen bildet den Start des Mälzungsprozesses und sorgt dafür, dass das angelieferte Getreide einen Wassergehalt von rund 30% aufbaut. In unserer Mälzerei werden täglich 4 Weichen, sprich große Edelstahlgefäße mit jeweils 85 Tonnen Getreide gefüllt und in Abhängigkeit der Sorte und des Jahrgangs für mehrere Stunden unter Wasser gesetzt. Wozu das Ganze? Nach der eben beschriebenen Nassweiche und anschließenden Trockenweiche bilden sich, solange noch nicht vorhanden, die für den Brauvorgang elementare Enzyme im Korn und der Keimling beginnt zu wachsen.

Bitte bedenkt, dass dies eine sehr oberflächliche Beschreibung eines in Gänze doch sehr komplexen Vorgangs ist. Würde euch eine detaillierte und von Bildern begleitete Beschreibung interessieren? 🤔

🇬🇧 Steeping is the first step in the malting process and causes a rise of the grain moisture content to about 30%. In our malting we daily fill 4 steepings, which means huge stainless steel containers with 85 tons of grain each and cover the grain with water. That way the grain is ready for the subsequent germination and the forming of the enzymes, which is elementary for the brewing process at all.
